My weekend started out fairly dramatic and ended very anti-climactically. Tropical storm Isaac blew through town, shutting down mostly everything (including my school). I expected the weather to be way worse since everyone was acting so crazed, but the storm only involved some monsoon style rain and a bit of howling wind. It really wasn’t bad. The worst of the storm was actually the boredom brought on by getting shut indoors for three days straight. Some people had hurricane parties, others hung out with friends, and I hibernated for three days. It was nice, but I can guarantee it would have been nicer if I had managed to drag my butt to the grocery store and buy the ingredients to make nachos.
Microwave Nachos (serves 2)
- 2 oz. tortilla chips
- 1 can refried beans
- ½ cup Mexican cheese
- jalapeno slices (to taste)
- ½ cup guacamole
- ¼ cup salsa
- sour cream (to taste)
- dash of hot sauce
1. Heat beans in microwave until warm. Stir in hotsauce.
2. Layer chips, beans, cheese, and jalapeno on a plate. Microwave until cheese has melted (approximately 45 seconds).
3. Top with guacamole, salsa, and sour cream.
4. Eat immediately.
